Pouring Passion into Every Glass

Hospitality isn’t just a career for me; it’s a legacy that runs deep in my veins. Growing up in the west of Ireland, I was inspired by my grandmother, a pioneering female publican who, alongside my father and family, ran a successful city centre pub. This familial backdrop instilled in me a profound passion for the hospitality industry, guiding me toward pursuing a Bachelor of Business in Bar and Restaurant Management at Atlantic Technological University (ATU).

My academic journey was marked by a blend of traditional learning and invaluable practical experiences. In my second year, I grabbed the opportunity to work internationally, spending 30 weeks with Hilton Hotels in the Scottish Highlands. This stint was a pivotal moment for me, significantly boosting my confidence and career prospects. The hands-on experience with a global brand in such a distinct location was nothing short of transformative.

ATU enriched my practical learning through its training service bars, restaurants, and kitchens, which operated daily. This setup allowed us to engage in real-life hospitality management, from serving university peers to managing operations and finances. The highlight was the wine studies labs, where I began my journey toward WSET accreditation, laying the foundations in beverage management.

After university, my career trajectory took me from bartending in a late-night entertainment venue to managing high-end cocktail bars. My experience during university played a crucial role in quickly ascending to managerial positions, where I was able to innovate and introduce new concepts to the local hospitality scene. I went on to consult for other pubs, bars and restaurants, enhancing their drink offerings, and later overseeing bar operations at Soho Farmhouse in Oxfordshire and Sky Garden in London. Currently, as the Group Operations Manager for the Inception Group estate, I lead operations across a portfolio of unique venues, constantly encountering new challenges and learning opportunities.

What truly excites me about hospitality is how dynamic it is – no two days are alike, and the opportunity to meet diverse teams and learn new facets of the industry is endless. It’s a field that offers myriad paths, from finance and marketing to design and operations, each providing a unique perspective on creating memorable experiences.

I often say that everyone should experience working in hospitality at least once. It’s an industry that teaches invaluable skills like communication and teamwork, preparing individuals for a wide range of future endeavours. Whether you’re drawn to finance, event management, or creative design, hospitality is a field that nurtures growth, innovation, and a deep sense of community. Joining this industry has been one of the most rewarding decisions of my life, and I can’t recommend it enough to those eager to embark on a fulfilling career path.
